When a protein in its native form, is subjected to physical change like change in pH , temperature etc it loses its biological activity.(Or destruction of secondary and tertiary structure.)
(ii)
Hydrolysis of sucrose brings about a change in the sign of rotation, from dextro (+) to laevo (-) and the product is named an invert sugar.
